KAHLUA WHItE RUSSIAN CUPCAKES
INGREDIENTS:1 cup Sugar½ cup Butter2 Eggs2 teaspoons Vanilla Extract1 ½ cupls All-Purpose Flour1 ¾ teaspoons Baking Powder½ cup Milk3 tablespoons KahluaPreheat oven to 350 degrees.In a mixing bowl, cream together the Butter & Sugar.Beat the eggs, one at a time, then stir in the Vanilla.Combine Flour & Baking Powder in a separate small bow, then add to Creamed sugar and mix well.Add Milk, and stir until smooth.Place paper cupcake-liners and place in cupcake Baking Pan. Spoon cupcake batter into the cupcake liners. Bake for at 350 degrees for about 16-18 minutes, until a toothpick that is poked into the center of a cupcake comes out clean.Take cupcakes out of oven and set aside to cool.Brush tops of cupcakes with Kahlua. Let it soak into the cake.KAHLUA FROSTING8 ounces Cream Cheese, at room temperature1 stick Butter, room temperature3 cups Powdered Sugar½ cup Cocoa, unsweetened½ teaspoon Pure Vanilla Extract6 tablespoons Kahlua3 tablespoons Heavy CreamBeat cream cheese, sugar, and butter together until smooth and thoroughly mixed.Add Cocoa and mix. Add Vanilla and Kahlua and mix. Add Heavy Cream, and mix till smooth.Frost each cupcake with frosting.

6 dried anchovies, head and innards removed (if you can’t find dried anchovies, substitute 3 tbsp fish sauce)
1 sheet dried kelp (kombu)
for sauce:
6 garlic cloves, minced
1 tbsp Korean red pepper paste (gochujang)
1-2 tbsp Korean red pepper powder (gochugaru) (adjust to taste)
1 tbsp soy sauce
1 tsp sesame oil
1 tbsp sugar
1 tbsp Shaoxing rice wine (optional)
generous pinch black pepper (optional)
for the stew:
1 cup cabbage, chopped
1/2 cup diced onion
1/2 cup chopped kimchi, well-fermented
2 scallions, chopped, plus more for garnish
2 hot dogs or 2 oz Polish kielbasa, sliced
4 oz Spam (1/3 can, or more if you prefer)
1/2 lb ground beef
1 cup dduk (Korean rice cakes, optional)
4-6 oz tofu, sliced (1/2 package, optional)
1/4 cup baked beans (optional)
1/4 cup mushrooms, sliced (optional)
1-2 packets ramen
slices of white American cheese or mozzarella, for topping
Instructions :
If using duk, place it in a bowl with plenty of cold water and let soak while you prepare everything else.
Prepare the stock. Combine 6 cups water, mushrooms, anchovies, and dried kelp in a large 5-6 quart pot, or a hot pot if you have one. Bring to a boil over medium-high heat and let simmer for 5 minutes, then remove kelp. If using anchovies, let simmer for another 5 minutes, then remove anchovies.
Meanwhile, mix together the sauce ingredients (garlic, gochujang, gochugaru, soy sauce, sugar, rice wine, and pepper) in a small bowl.
Place the cabbage, onion, kimchi, scallions, and sliced meat into the simmering broth, then place the ground beef in the center. If using, also add the dduk, sliced tofu, beans, and mushrooms. Pour the sauce over top. Reduce heat to medium and let simmer for 10 minutes, or until ground beef is cooked. Stir the ground beef to break it up into smaller pieces. You can leave the other ingredients in a ring around the beef for presentation, or just mix it all up.
Add the ramen to the center of the broth and cook for 2-3 minutes more, until noodles are soft. Top with American cheese or mozzarella if desired, and enjoy immediately!
GWYNETH WON'T EAT OCTOPUS BECAUSE THEY'RE TOO SMART
While musing with Goop co-workers on a group Slack chat, Gwyneth Paltrow made a pretty salient point about not eating octopus.
In a screenshot of the conversation that made the rounds via Twitter on Sunday, the 44-year-old actress argued against eating the sea creature.
“Octopus are too smart to be food,” she wrote. “They have more neurons in their brains than we do. I had to stop eating them because I was so freaked out by it. They can escape from sea world and shit by unscrewing drains and going out to sea.”

The conversation later expanded to cover whether squid, a fellow cephalopod, is OK to eat or not, though opinions were more divided on that topic.
The incident Paltrow mentions about an octopus escaping to the sea is true, though it didn’t happen at Sea World and it didn’t unscrew a drain. In 2016, an octopus named Inky escaped from his home at the National Aquarium of New Zealand. According to a New York Times article documenting his escape, Inky went through the top of his tank, slithered eight feet across the floor, then made his way down a 164-foot-long pipe to the sea.
Many other octopus escapes have been documented over the years, some by unscrewing tanks or wiggling out of tight spaces.
“Octopuses are highly evolved and specialized,” Roger Hanlon, a professor at Brown and senior scientist at the Marine Biological Laboratory in Woods Hole, Massachusetts, said in a Live Science article. “They have the largest, most complex brain of any invertebrate animals on Earth.”
Some, like Paltrow, argue people shouldn’t consume octopuses because of their genes (they have around 10,000 more than humans) or their neuron count. Though as a report from Scientific American states, octopuses have 500 million neurons, while a human has around 100 billion (so Paltrow was actually incorrect when she said octopuses have more neurons than humans).
People eat octopus all around the world. In South Korea, some people eat live octopus as part of a traditional dish. Certain restaurants in the United States ― mostly found in California and New York City ― serve octopus live.
“Gwyneth was right, octopuses are highly intelligent and self-aware, and are notorious escape artists,” Ingrid Newkirk, the president of PETA, told HuffPost. “Scientists have verified that octopuses are capable of experiencing pain: Like humans, dogs, and pigs, octopuses have well-developed nervous systems, try to escape painful stimuli, and nurse their wounds.”
She added, “Octopus expert Dr. Jennifer Mather has stated that ‘There is absolutely no doubt that they feel pain,’ and explained that an octopus who is being eaten alive is in just as much pain as a pig, fish, or rabbit would be.”

At the time I was The Wine Director at Barbetta Restaurant in New York ...
When working in the restaurant business you always work with some interesting characters ..
One of the guys I work with was a person named Oscar Reyas who came from Chapas Mexico ..
Oscar had a dream, to learn to speak English so he could get a better paying job in a
resort hotel in Mexico and maybe one day moving to America and New York .. He did both.
So when I met Oscar we were both working at Barbetta Restorante, Oscar as a dishwasher and I as the Wine Director of the single greatest Italian Wine List in the United States ..
I often chit chatted with Oscar about this and that and this is how I learned of his story. I asked Oscar if he would like to make a little movie telling his story. He agreed and so it began. I never got that far, but it did begin and I did get some good footage, and so here it as. At least something did become of it .. I give you Oscar The Mexican Dishwasher and all around wonderful human being. Enjoy !
