1 slice of ham cut into strips (Julienne)
¼ cup of a Red and or Green Bell Pepper diced
2 teaspoons of vegetable oil (Canola, Corn, etc.)
Salt and Ground Black Pepper
1 Scallion (Green Onion) sliced

1. Place a small Non-Stick Frying Pan over a burner on the stove top and turn the heat on to a medium flame. Add oil and let heat 2 minutes. Add green peppers and cook for three minutes, stirring occasionally.

2. Add Mushrooms and cook for 3 minutes. Add Scallions. Cook for 3 minutes.

3.Crack the eggs into a small bowl. Season with salt and pepper. Beat the eggs until they are one solid color of yellow.

4. Add ham to pan and cook for 1 minute.
5. Remove contents of pan to a plate or bowl on the side. Turn heat up to high. Add butter.

6. Heat butter for 30 seconds, then add the Beaten Eggs to pan. Cook eggs while stirring just a little bit for one minute.

7. Lower flame to medium and let eggs cook through and form one whole round mass the same shape as the pan.

8. Turn heat off. Place the reserved ham and vegetables over one side of the eggs. Fold the other side of eggs over the vegetables.

9. Place your Denver Omelette on a plate. Eat and Enjoy and always Abide!

NOTE: Egg White Omelets are very popular these days with people looking to cut down on the high cholesterol in an egg yolk. To make an Egg White Denver Omelet, use three eggs. Break the eggs one at a time into a bowl. After you crack one egg into the bowl, you need to remove the yolk with your hand. Do the same with the remaining 2 eggs. You will end up with a bowl of three egg whites. Add salt and pepper and beat the egg whites and proceed in the same manner as you would have with the whole eggs.
